Since the only reason I was enjoying the corona thread was the week it became food porn, I decided to make a thread here so I can continue to enjoy the amazing food recipes with all on the forum, without having to wade through the corona thread.

Smoked a turkey breast last week (no photo on this device) with apple chips. Used some homemade rub. Turned out amazing.

Even tried smoking the veggies. Turned out ok, but I over cooked them. Oops.

We are doing simple burgers and dogs tonight on the grill. All the fixins and tater tots, which I will blast with Tony's rub.

Since being here we've done chops, ribs, spaghetti as well. Pretty good few days. Unfortunately, back to reality tomorrow.

I’m grilling some pork steaks tonight and then finishing them in the crock pot with some honey chipotle bbq sauce. Grilling some chicken tenderloins and then tossing them in a chili habanero wing sauce. Steaming brussel sprouts as well. Pics later

If you have a gadget to Sous Vide, this short rib recipe is amazing. Made it 3 times and each time my in-laws keep asking for more. I use their method of 48 hrs @ 160. Takes a long time, but worth the wait. The sauce with mashed potatoes is a hit!

Sous vide is easy. I know it sounds foo foo, but go for it.

I'll sous vide rib's and finish them on the BBQ. Or I'll start on the BBQ for smoke and finish in the sous vide. Simple things like chicken breast are so much more tender and perfectly cooked. The nice part is, you don't need to keep your attention on the cooking. Once you set the time, you just let it go. You cannot over cook it (within reason). I love BBQ'ing, but it's an active sport. When I have time, I BBQ, when I want 3/4 of the work to be done for me, I sous vide.

I sous vide a couple of times a week. Steaks are perfectly cooked, just finish them in butter in the skillet (it’s too hot right now to fire up the grill). It’s especially good for chops as my wife can’t get them tender when she fries them.

Here's the dinner. I had to skewer and marinade the chicken in green hatch chili sauce. But still turned out amazing.

Pork Steaks are St. Louis style...season with salt and pepper and garlic, 275 for 15-20 minutes per side. Then dunk them in the BBQ sauce and let them simmer (boil) for as long as you want (longer is better). I take them out and sear them on the grill for 3-4 mins per side at 375 and then back into the sauce. Longer in the sauce, the more tender and just falls off bone.

Had a Fat Tire beer to go with it. 0707201859.jpeg 0707201855_HDR.jpeg

Gonna have a big time food porn weekend-tonight doing Kona Grill (sushi and such), tomorrow hitting up a cajun spot for po boys and oysters, sunday hitting up Italian. May as well take advantage before Kemp shuts us back down. Pics to come.

Tonight we did simple, spaghetti with meat sauce (ground turkey), a chopped caesar and baked some french bread, dipping it in Oil/black pepper. Simple and cost hardly anything...but it was sooooooo good. Cooking on a Saturday night is one of my favorite things.

Tonight's dinner for picky people (gotta keep everyone happy):

    Steak fajitas on the left
    Chicken fajitas on the right

Spanish rice and beans on the side

And a boatload of margaritas...(ignore that I poured into a Founders IPA glass...)

    Good times.

    All from scratch...and all delicious. 0720201924.jpeg 0720201931~2.jpeg

Now that is a monday I can endorse and enjoy. Cannot wait to have meals like that with sports on...I like the effort on the fajitas...keep the household happy.

We did a 3 combo sushi thingy tonight. One shrimp-Avocado, One Spicy crunch crap and one philly roll. Add a little miso soup and all is well. Washing it down now with a couple vodka-sodas.
